Slow Food, Slow Living

Jason and Ashley are Slow Food International members and follow the Slow Food philosophy that believes that everyone has a fundamental right to pleasure, and, consequently, the responsibility to protect the heritage of food, tradition, and culture that make this pleasure possible. The movement is founded upon this concept of eco-gastronomy-recognition of the strong connections between plate and planet.

Pull up the Wellies because at our farmhouse and cooking school here in Le Marche, Italy, we head straight into the garden to pick our fruits and vegetables for every meal! In the winter months, Jason and Ashley make their own sausages, salami, and lonzo from scratch, curing them in the cool winter breeze that passes through the rafters of the house. We jam, jar and preserve to extend the season. Sample our house-bottled local wine and homemade liquors & vin santo, nocino and visciolino made by Ashley.

It is incredibly satisfying to walk a hundred feet from the house with a group of guests and pick the night's dinner! Our guests experience picking zucchini and eggplants off the vine, checking in on the tomatoes, popping bright red cherry tomatoes into their mouths, then heading up to the kitchen to create deliciously simple dishes with the cucumbers still warm from the sun!

With a crate full of fresh-picked vegetables, the cooking begins!

"Farm to the Table" experiences can truly transcend the holiday-many guests return home excited to become more connected to their food and start digging their own gardens or expanding their current ones. Some have even added outdoor ovens-Bravo, Primo!

Our farm produces potatoes, onions, tomatoes (over 7 varieties), numerous types of lettuces, melons, zucchini, garlic, squash and pumpkins, carrots, radishes, cucumbers, eggplant, and beans just to name a few, as well as the hundreds of acres of alfalfa used as feed for livestock. Walk along our road or into our backyard and you will find wild edibles like greens, dandelions, asparagus, berries, nuts, peaches, apricots, apples, plums, fennel, and numerous species of funghi and truffles all grown wild here!

Eco-Friendly, Green Holiday

At La Tavola Marche, we utilize the crops grown on the property & in our organic farm, raise free-range chickens, compost, recycle, and use natural mineral water from our sulphur spring for drinking, bathing, gardening & in the swimming pool. We try to leave as small of an eco-footprint as possible.. We re-use grey water in watering the garden, and we compost or recycle practically all waste. We support local farms, artisanal producers, and a host of local businesses.

Therapeutic Mineral Water Spring


Sulphorus mineral water is found on our property and used for drinking, farming, bathing, and in the swimming pool. Sulphorous does not mean odorous! The water is highly regarded for its healing potential. The mineral water sources found in Le Marche have remarkable beneficial and remedial properties both in thermal treatments (bathing and at the pool) and when bottled for drinking. The waters found at Agriturismo Ca'Camone have large amounts of hydrogen sulphide making them unique for many reasons:

●  It is known to increase local and general defenses and is scientifically proven to boost antibodies
●  potent anti-inflammatory effects
●  stimulates cellular renewal and growth of skin
●  important sedative, muscle relaxant, and analgesic action deriving from the sulphates, calcium, bicarbonate, and magnesium
●  suitable treatment for chronic respiratory system, osteo-articular, and skin (acne, eczema, psoriasis) complaints.
●  The therapeutic properties of ancient thermal medicine were proven in ancient times, and they are defined "the continent of Europe's traditional medicine" by the the World Health Organization.
