At La Tavola Marche, we are as self-sustainable as possible. Utilizing the crops grown on the property, we compost, recycle, and use natural mineral water in our pool, and for bathing and gardening. Whenever possible, we use the natural spring found on our property. We try to leave as small a human footprint as possible. We re-use grey water in watering the garden, and we compost or recycle practically all waste. We support local farms, artisanal producers, and a host of local businesses.

Jason and Ashley are Slow Food International members and follow the Slow Food philosophy that believes that everyone has a fundamental right to pleasure, and, consequently, the responsibility to protect the heritage of food, tradition, and culture that make this pleasure possible. The movement is founded upon this concept of eco-gastronomy—recognition of the strong connections between plate and planet.

Slow Food Is Good, Clean, and Fair Food

We believe that the food we eat should taste good; that it should be produced in a clean way that does not harm the environment, animal welfare, or our health; and that food producers should receive fair compensation for their work. By reawakening and training the senses, people rediscover the joys of eating and understand the importance of caring where their food comes from, who makes it, and how it is made.

La Tavola Marche marries the enchantment of untouched nature and a land of magically unique culture with the comfort of modern accommodations, complete with all the features that are considered eco-friendly. Our guests devour the local specialties that Chef Jason prepares daily based on what is in season at the market.

This cheerful agritouristic complex is immersed in a natural setting, surrounded by hills and mountains in the tranquil Candigliano Valley amid forests and inviting pine groves with age-old paths for trekking and mountain biking. The area is rich in mushrooms and truffles, and the farm owner makes and sells delicious prepared meats, hams, and cheeses typical of the Apennine country areas.
