Six guests, five nights & four days of prep. The final test: A five course lunch for local Italians! This is a practical experience of what it’s like to work in a professional kitchen. Before we were cooking for fun, but this time it’s for real.
We will take the fundamentals you learned (remember F.A.S.S.A.!) and build on technique, precision, timing & menu planning, scaling recipes for large number, all culminating with a big Sunday lunch for a group of hungry Italians!
We will spend the days leading up to Sunday prepping for the big feast. Making fresh pasta for Cappelletti in Brodo, Sausages from Scratch, Pork Belly, Confit, working with Octopus, local bread, the perfect fritatta ...
The menu may change, but you get the point - this is not the usual cooking class! We will not only work as a team to prepare the five course Sunday lunch.
It's a great prep for your next Thanksgiving or Christmas meal!
**Plus it's the same weekend as the Truffle & Mushroom Festival in Sant'Angelo in Vado!! We'll go to the festival together for a taste of the local life!!
